Meal Prep: Salads-In-A-Jar!
Salads-in-a-Jar! Simple fast and ready for the week!
Probably to the dismay of my West African mother, I’ve never been much of a meal planner or food prep person. It’s not a good look especially when you’re trying to keep a healthy diet and juggle mother duties. At best, I will write out a few things on my phone’s Notepad app. So I live for quick meal ideas.
A good friend of mine introduced me to salads-in-a-jar. In fact, she had a Salad Jar Party and that’s where my love for them began. A few of us got together with two salad ingredients/toppings each, think chickpeas, corn, carrots, peppers, apples, nuts etc. We also brought mason jars, as many as we wanted. So 3 to make 3 salads or 7 for 7 salads for the entire week. The host provided the greens, lettuce, spinach or spring mix and then we went to town with prep. Like an assembly line, we layered each topping into the jar and then topped it off with the greens. It was so easy and fun that I started doing them on my own most weeks. I typically start with the dressing as the base layer (just a tiny bit it goes a long way). The next layer is usually a protein or heavy vegetable and then I like to add some nuts or craisins before I add the last layer of greens (I do a spring mix). Tada, all done! They last up to 7 days in the fridge. When I’m ready, I grab one, shake it up and dump it in a bowl. Even if you do like to map out your meal for a week at a time, salads-in-a-jar are great for the on-the-go. Take it to work or stash in the fridge for a quick meal after a run or the gym.
